
Ingredients:
Cashews 400gm, Sesame seeds 40gm, Sugar/rock sugar 100gm, Maltose 20gm, Water as needed * White vinegar optional
Methods:
1. Rinse the sesame seeds and toast over low heat using the e-Touch electric smart stove. Set aside.
2. Rinse the cashews, then blanch in boiling water. Drain and pat dry.Tip: Adding a little white vinegar to the water helps make the cashews crispier after frying.
3. Heat oil in a pan. Fry the cashews over low heat until golden and dry. Remove and set aside.
4. In a separate non-stick pan, combine sugar, maltose, and a small amount of water. Cook over low heat until it forms a light caramel syrup, then turn off the heat.
5. Quickly stir the cashews into the syrup to coat evenly, then remove them. 6. Heat the oil again, and fry the caramel-coated cashews over medium-low heat until they turn a deeper golden color.
7. Transfer the fried cashews to a large bowl with toasted sesame seeds. Toss quickly to coat them evenly with sesame seeds.
8. While warm, separate any cashews that are sticking together.
9. Let them cool completely before storing in an airtight container.
材料:
腰果 400gm、芝麻 40gm、白糖/冰糖 100gm、麦芽糖 20gm、水 适量、白醋 适量(可加可不加)
做法:
1.芝麻洗净后 e-Touch智能电炉设小火炒香待用。
2.腰果洗净, 水沸后将腰果倒入汆水,捞起控干。*水中可以加一点白醋,会让腰果炸好后更酥脆。
3.锅中倒入油烧开,然后设小火将腰果水分炸干,呈金黄色即捞起待用。
4.另外一个不粘锅倒入白糖,麦芽糖和适量水煮至稍为稀的焦糖状后熄火。
5.倒入腰果快速炒匀让每一粒裹上焦糖后捞出。
6.然后再倒入已经烧开的油,中小火快速复炸一次至颜色更为金黄。
7.捞出后倒入装有芝麻的大盆中,快速翻动让腰果均裹上芝麻。
8.趁还有余温将粘在一起的腰果分开。
9.冷却后装入密封罐保持即可。
