Purple Snowy Mooncake 紫薯冰月饼 (video)

Ingredients: Purple Sweet Potato(Remove skin and cut into cube)-370 gm, Pumpkin(Remove skin and cut into cube)-350 gm, Rice Flour-40 gm, Glutinous Rice Flour-100 gm, Wheat Flour-20 gm, Life Water-100 ml

Methods:

1. Bring the steamer to boil, and then steam the purple sweet potatoes and pumpkins at medium heat for 20 minutes. After that, mash the purple sweet potatoes and pumpkins respectively. 

2. Put the mashed purple sweet potato, rice flour, glutinous rice flour and wheat flour into the e-Maker, press “Knead” button to start kneading process. Slowly pour in the Life Water during the kneading process.

3. After 4 minutes, take out the mixture from the e-Maker, make into dough. Place the dough into a bowl and cover with a lid. Wait for 15 minutes for it to rise.

4. Stir fry mashed pumpkin until dry with low heat, set aside for use.

5. Divide the purple sweet potatoes dough into 35gm each.

6. Divide the dry mashed pumpkin into small portions for filling.

7. Flatten the purple sweet potatoes dough, add pumpkin filling, and then wrap it into round shape.

8. Dust the mooncake mould with rice flour. Place the dough into the mooncake mould, press lightly but firmly on the dough so that it fills the mould. Then, turn the mould upside-down and whack it on your palm to release the mooncake.

9. Bring the steamer to boil, steam the mooncake for 15 minutes.

10. Then refrigerate the mooncakes for 30 minutes. Ready to serve.

薯冰月饼

材料:紫番薯(去皮切丁)-370 gm、南瓜(去皮切丁)-350 gm、粘米粉-40 gm、糯米粉-100 gm、澄米粉-20 gm、生命水-100 ml

工具月饼模具-1 个

做法:

1. 预热蒸炉,将紫番薯和南瓜放入蒸炉,以中火蒸20分钟。 蒸熟后,用叉把紫番薯和南瓜分别压成泥状。

2. 将压好泥状的紫番薯,粘米粉,糯米粉及澄米粉倒入养生制造机,按“Knead”键开始搅拌。 搅拌时,慢慢地将生命水倒入养生制造机。

3. 4分钟后,将搅拌好的材料取出,搓成面团, 放在碗中,加盖,待放15分钟让它发酵。

4. 以小火将南瓜泥炒干备用。

5. 将发酵的紫番薯面团分成每粒35gm。

6. 将已炒干的南瓜泥也分成足够的小份馅料。

7. 将紫番薯面团捏成圆扁形, 加入南瓜泥馅料,包起来搓成圆形。

8. 在月饼模具内撒上粘米粉,放入月饼面团,轻压至牢固,压平后敲出月饼。

9. 预热蒸炉, 将月饼蒸15分钟。

10. 最后将月饼放进冰箱冷冻,30分钟后即可享用。
