Ingredients:
Chicken 500gm (300gm chicken breast, 200gm chicken thigh), Water 50ml, Cornstarch 20gm, Lemongrass 10 stalks (plus extra for wrapping the chicken), Large red chili 2, Garlic 6 cloves, Shallots 2, Kaffir lime leaves 2-3, Cooking oil 10gm
Seasoning:
Pepper 5gm, Fish sauce 10gm, Light soy sauce 10gm, Oyster sauce 10gm, Coconut Sugar 15gm, Salt 2gm, Turmeric powder 1gm
Instructions:
1. Wash all ingredients and pre-mix the seasoning.
2. Peel the outer layer of the lemongrass and trim the ends.
3. Remove the stems and seeds from the chilies.
4. Peel the garlic and shallots.
5. Place the lemongrass, chilies, garlic, and shallots into the iTAZZO i-Processor’s dry grinder jug and pulse a few times to crush.
6. Add the chicken, water, cornstarch, and seasoning mix.
7. Pulse few times until the chicken is finely minced and everything is evenly combined.
8. Transfer the chicken mixture into a bowl.
9. Lightly grease your hands with oil, wrap the chicken mixture around the lemongrass stalks, shaping it into sausage-like skewers.
10. Heat oil in a pan and fry or pan-sear the skewers on medium-low heat until golden brown (around 7-8 minutes).
11. Let them cool slightly, then serve with Thai chili sauce—so delicious!
材料:
鸡肉 500gm(鸡胸肉 – 300gm/鸡腿-200gm)、清水 50ml、玉米淀粉 20gm、香茅 10根 (也请准备多的香茅用作鸡肉包裹)、大红辣椒 2根、大蒜 6瓣、红葱头 2颗、麻疯柑叶 2-3片、食用油 10gm
调味:
胡椒粉 5gm、鱼露 10gm、生抽 10gm、蚝油 10gm、椰糖 15gm、盐巴 2gm、黄姜粉 1gm
做法:
1.将所有材料洗净,调味料预先调好。
2.香茅去掉外面一层,洗净后切去头尾,剪成小段待用。
3.辣椒去蒂,去籽后剪成小段待用。
4.大蒜和红葱头去蒂,去皮待用。
5.将香茅、辣椒、大蒜、红葱头和倒入i-Processor干磨杯,按pulse键数次打碎。
6.然后加入鸡肉、水、淀粉、还有混合好的调味料。
7.按Pulse 键数次直至鸡肉打碎跟所有材料混合均匀为止。
8.倒出打好的混合肉泥。
9.手套抹上适量食用油,将肉泥包裹在香茅根上,整成肉肠形状。
10.锅内倒入油,中小火炸/煎至金黄色即可(约7到8分钟)。
11.稍微冷却后,沾上泰式辣椒酱真的也太好吃了!
