Ingredients:
Rice Batter:
White rice 100gm, Wheat starch or cornstarch 20gm, Water 100ml
Others & Seasoning:
White radish 250gm, Shallot 1 piece, Garlic 2 cloves, Dried shrimp 15gm, Dried scallops a small handful, Salt 2gm, White pepper 1gm, Sugar 2gm
Optional: a dash of soy sauce or oyster sauce
Methods:
1. Wash the white rice and soak it in water for at least 2 hours.
2. Rinse the dried shrimp and dried scallops, then soak them until softened.
3. Peel and cut the white radish into chunks.
4. Remove the stems and skins from the garlic and shallot.
5. Place the dried shrimp, garlic, and shallot into the i-Processor dry grinding jug. Use the Pulse function to chop them into small pieces.
6. Add the white radish chunks into the same jug and use the Pulse function to chop them coarsely. (Do not over-blend; if the radish is too watery, gently squeeze out the excess liquid.)
7. Heat some oil in a pan and stir-fry the chopped shrimp, garlic, and shallot over medium heat until fragrant.
8. Add the chopped radish and seasonings, stirring until well combined. Set aside.
9. In the i-Processor smoothie jug, blend the soaked rice and water on speed 6 for 2 minutes until smooth.
10. Add the wheat starch or cornstarch into the rice batter and mix using the Pulse function.
11. Pour the batter into the cooked radish mixture and mix thoroughly.
12. Grease a container with a thin layer of oil, then pour in the radish batter mixture.
13. Top with the soaked and shredded dried scallops.
14. Steam in a preheated steamer on medium heat for 30 minutes.
15. Let it cool completely before cutting. (Tip: apply a thin layer of oil on the knife to prevent sticking.)
16. Serve the steamed radish cake with chili sauce, or slice and pan-fry it for a crispy golden crust. Both ways are delicious!

做法:
1.白米洗净后,提前浸泡至少2小时。
2.虾米,干贝洗净后提前泡软。
3.萝卜洗干净后削皮切块待用
4.大蒜和红葱头去蒂,去皮待用。
5.将虾米、红葱头和大蒜加入i-Processor干磨杯,按Pulse键数次打碎待用。
6.将白萝卜倒入i-Processor干磨杯,同样按Pulse键数次打碎待用。*注意,白萝卜别打太碎了。如果萝卜水份较多,稍微挤干水份。
7.锅内加点油,倒入打碎的虾米、红葱头和大蒜碎中小火炒香。
8.再倒入萝卜碎,加入调味料炒至均匀混合,盛起待用。9.白米和水倒入i-Processor大杯,档速6打2分钟至米浆。
10.然后加入澄粉或玉米淀粉,按Pulse键拌匀即可。
11.将米浆倒入炒好的萝卜,拌匀。12.将容器抹上一层油,然后倒入混合好的萝卜米浆。
13.表面铺上泡软后的干贝丝即可拿去蒸。
14.水烧开后,转中火,定时30分钟蒸熟即可。
15.待完全放凉后,别可以在刀上抹上点油防粘,切萝卜糕。
16.蒸熟后直接沾辣椒酱,或者再切片稍微煎过,都很好吃!
