Homemade Hainanese Chicken Rice Chili Sauce 自制海南鸡饭辣椒酱 (Video)

Ingredients:
Large Red Chili-300gm, Small Chili-as desired for spiciness, Old Ginger-50gm, Garlic-120gm (2-3), Sugar-20gm, Lime-1, Fish sauce to taste (recipe suggests about 3gm)

Methods:
1.Wash the chili , remove the stems of the chili, peel the ginger and garlic, and squeeze the juice from the lime (remove seeds).
2.Set the i-Processor to speed 6, add all ingredients, and blend until smooth.
3.Transfer the chili sauce to a clean container and refrigerate; it can be stored for approximately 1 week.

*Using a moderate amount of fish sauce instead of salt enhances the flavor of the chili sauce.

 

材料:
大辣椒-约300gm、小辣椒-喜欢辣的可以放、老姜-50gm、大蒜-120gm (2-3粒)、砂糖-20gm、酸柑-1粒、鱼露-适量(食谱放约3克)

做法:
1. 辣椒洗净去蒂,姜去皮、大蒜去皮、酸柑挤出酸柑汁(去籽)。
2. 加入所有材料,i-Processor智能养生机设置档速6,搅拌至细滑即可。
3. 可将辣椒酱放入干净容器,置入冰箱冷藏可保存1星期左右。

*使用适量鱼露代替盐,可以给辣椒酱提鲜,风味更佳!
