Ingredients:
Fresh Arrowhead, Salt–as needed, Curry Powder–as needed, Curry Leaves–as needed
Methods:
1. Clean the arrowheads and peel them but keep the stems.
2. Prepare a bowl of salt water to soak the peeled arrowhead, it is to prevent the arrowhead from oxidizing & turning black.
3. Rinse the arrowhead thoroughly with water, and spread the arrowhead on a large platter, place under the sun to let excess water evaporate. Alternatively, refrigerate them overnight to absorb moisture for a crispier texture.
4. Pour the oil into a pan, using Induction stove, set the heat level to 7. Once the oil is hot, reduce the heat to level 3 and carefully slice the arrowhead into the oil (holding onto the stems prevents
accidentally cutting your hand).
5. Wait until the bubbles around the arrowhead slices in the oil have subsided before stirring. Continue frying until they turn into an even light golden colour. If you want a curry flavour, you can add curry leaves at this point.
6. Remove the fried arrowhead slices from the oil, drain any excess oil, and season with salt or any preferred seasoning to enhance the flavour. Store in a jar once cooled. Enjoy!

做法:
1. 芽菇洗净后去皮(留下蒂)。
2. 准备一盆盐水盛装去皮后的芽菇,可防止芽菇氧化变黑。
3. 倒掉盐水后以清水洗净芽菇,平铺在盘子上,放置在太阳底下让多余水分蒸发,也可以放在冰箱隔夜吸干芽菇水分。这样炸起来更酥脆且不容易回软。
4. 使用Induction,锅中倒入油,设定7号火让油热后,转中小火3号将芽菇削入油锅内。(抓住芽菇蒂削就不怕划到手了)
5. 等油锅内的芽菇片周围都消泡后,才搅动,然后继续炸至均匀的微金黄就可捞出。想要做咖喱口味的,咖喱叶也可在这时加入。
6. 捞起控干油后,再加入盐或任何喜欢的调味料增添风味,再装入罐子即可。
