Ingredients A: Butter – 50 gm, Icing Sugar – 40 gm, Self-raising Flour – 55 gm, Cocoa Powder – 5 gm
Ingredients B: Life water – 100 ml, Butter – 45 gm, Salt – 1 gm, Sugar – 5 gm, Flour – 50 gm, Cocoa Powder – 5 gm, Egg – 2 pcs
Ingredients C: Whipping Cream – 300 ml, Durian Pulp (Remove seed) 250 gm
Methods:
1. Mix well all Ingredient A in a bowl then wrap it and put in freezer for 30 minutes.
2. Put Life Water, butter, salt and sugar of ingredients B into a pot and boil it. After boiling, turn off the heat, add in the flour and egg, mix well.
3. Pour the mixture into a piping bag and squeeze out into round shape balls on the baking tray. Slice the refrigerated dough and place on each ball.
4. Preheat the oven, set at 200℃ and bake for 25mins.
5. Put the whipping cream of ingredients C into the e-Processor, set at speed 3 and blend for 2 mins, then add in the durian pulp and blend until smooth.
6. Put the durian mixture into the piping bag and squeeze them into each puff. Ready for serve.
*Tip: Best served chilled.
榴莲巧克力泡芙
材料A :牛油 – 50 gm, 糖粉 – 40 gm, 自发面粉 – 55 gm, 可可粉 – 5 gm
材料B :生命水 – 100 ml, 牛油 – 45 gm, 盐 – 1 gm, 糖 – 5 gm, , 面粉 – 50 gm, 可可粉 – 5 gm, 鸡蛋 – 2 顆
材料C :淡奶油 – 300 ml, 榴莲果肉 (去籽) – 250 gm
做法:
1. 将所有材料A混合均匀后, 把面团搓成圆柱,然后放碗里包好。放入冰箱的冰柜冷藏半小时。
2. 将材料B的生命水, 牛油, 盐和糖放入锅中加热至沸腾。 熄火后, 将面粉和鸡蛋放入锅中搅拌均匀。
3. 完成后, 把面糊放入挤花袋,在烤盘上挤成圆形粒状。将之前步骤1冷藏的面团切片, 盖在每个粒状表面上。
4. 预热烤箱,放入烤盘,设定200℃烤25分钟。
5. 将材料C的淡奶油放入养生调理机, 设定3号搅拌2分钟,再加入榴莲搅拌至细滑。
6. 将榴莲馅料放入挤花袋,挤入已烤好的泡芙内即可享用。
