Blanched Ipoh Bean Sprouts 白灼怡保芽菜 (Video)

Ingredients:
Bean Sprouts-about 600 gm, Spring Onion-a small bunch, Garlic-a few cloves, Shallots-2 pcs, Cooking Oil-an appropriate amount, Light Soy Sauce-2 tbsp, Sugar-2 tsp, Salt-1/2 tsp, Pepper Powder–as needed

Methods:
1. Rinse the bean sprouts twice with filtered water and drain.
2. Slice the garlic and shallots and cut the spring onions into small sections.
3. Set the Induction stove to medium heat at level 3. Heat the oil, then add the garlic slices and shallot slices, fry until crispy. Remove and set aside.
4. In the same pan, add the soy sauce, sugar, and salt, and cook until the sugar dissolves, then set aside.
Tip: Choosing a soy sauce that is both salty and slightly sweet will enhance the flavour.
5. In a separate clean pot, bring water to a boil on high heat at level 7. Blanch the bean sprouts and spring onion sections for just over 1 minute, then remove and drain.
Tip: Adding a little oil, sugar, and salt to the boiling water will help the bean sprouts absorb flavour and appear more vibrant.
6. Arrange the bean sprouts and spring onions on a plate, drizzle with the prepared soy sauce mixture, and sprinkle with the fried garlic and shallot slices and a dash of pepper powder. Serve hot to enjoy the fresh and crispy bean sprouts!

材料:
芽菜-600gm左右、青葱-1小把、大蒜-数瓣、 红葱头 -2粒、食油-适量、生抽-2汤匙、糖-2茶匙、盐-1/2茶匙、胡椒粉-适量

做法:
1. 芽菜买回来后,用过滤水洗净2次,沥干。
2. 大蒜和红葱头切片,青葱切小段待用。
3. 使用Induction,设定中火3号,热油后加入蒜片和葱头片炸至香脆,捞起待用。
4. 然后锅内加入生抽,糖和盐,煮至糖融化后,待用。
Tips:选择咸中带甜的生抽会更好吃
5. 取另外一个干净的大锅,盛水以大火7号煮沸,设定2分钟,将芽菜和葱段灼1分钟多即可捞起。
Tips:水中另外加入些许油、糖和盐有助芽菜入味,色泽更油亮
6. 芽菜葱段装盘,淋上刚才准备好的生抽酱汁、炸蒜和葱片以及适量胡椒粉即可。趁热享用,即可品尝到清甜脆口的芽菜啦!
