Crispy Fried Enoki Mushroom 酥炸金针菇 – Video

Ingredients:
Enoki mushrooms as needed, Cornstarch as needed, Eggs 2–3, Baking powder (optional), Cooking oil

Seasoning:
Salt, pepper, soy sauce to taste, Chicken stock powder (optional)

Methods:
1. Cut the roots off the enoki mushrooms and slice them into slightly thicker pieces. Rinse thoroughly and pat dry.
2. Beat the eggs in a bowl and mix in the seasonings according to your taste.
3. Pour enough cooking oil into a pot or deep pan. Set the e-Touch stove to medium-low heat and preheat until bubbles form around a chopstick inserted into the oil.
4. Dip the enoki mushrooms into the egg mixture, then coat evenly with thin layer of cornstarch. Shake off any excess starch.
5. Fry the mushrooms in batches until lightly golden, then remove. Increase the heat to medium and refry them for about 1 minute for extra crispiness.
6. Drain the excess oil on paper towels. Sprinkle with salt, pepper, or chili powder, and enjoy while they’re hot and crispy

材料:
金针菇 适量、玉米淀粉 适量、鸡蛋 2~3颗、泡打粉 (可加可不加)、食用油

调味:
细盐、胡椒粉、生抽 – 适量
鸡精粉(可加可不加)

做法:
1.金针菇切去根部,再片成稍微厚点薄片。水冲洗干净,控干水分。
2.鸡蛋打入碗中,根据个人口味适量加入调味料拌匀。
3.锅中倒入适合油炸份量的油,设中小火至油热(筷子插入冒小泡泡)。
4.将金针菇沾上蛋液,再裹上薄薄一层淀粉,抖掉多余的淀粉。
5.金针菇置入锅中炸至稍微金黄后捞出,再用中火复炸约1分钟,可让金针菇更酥脆!
6.控干多余的油后,可以撒上椒盐或辣椒粉,趁口感酥脆享用!
