Nyonya Ayam Rendang 娘惹仁當雞 (Video)

Ingredients:
Chicken Half (cut into pieces, about 800g), Coconut milk 100ml, Toasted coconut (Kerisik) 2 tablespoons, Malacca palm sugar 30gm, Kaffir lime leaves 3-4 pieces, Turmeric leaves 1 leaf (thinly sliced), Tamarind peel 1 piece

Marinating the chicken:
Mix the chicken with 1 teaspoon of salt and 1 tablespoon of turmeric powder, then marinate for half an hour to allow the flavors to soak in.

To make toasted coconut (Kerisik):
1.Toast fresh white coconut in a pan over medium-low heat until it turns golden brown and releases a fragrant aroma. (This process takes around 10-15 minutes.)
2.Let the toasted coconut cool down, then grind it using a food processor until finely ground.
3.Store the Kerisik in an airtight container once done.

Spice paste ingredients and preparation:
Dried chilies 8 pieces (soaked in hot water until soft), Red chilies 3 pieces, Shallots 8 pieces, Garlic 3 cloves, Turmeric 1 small piece, Shrimp paste (Belacan) 3gm, Ginger 1 small piece, Galangal 1 small piece, Candlenuts 2 pieces, Lemongrass 3 stalks, Oil 100ml, Water 50ml

Place all ingredients in a Itazzo I- processor, set to speed 5, and blend for 5 minutes (with cooking function).

-This Nyonya Rendang chicken combines aromatic spices and creamy coconut milk for a complex, slightly spicy dish, perfect to pair with rice.

腌制鸡肉:
鸡肉加入1茶匙盐和1汤匙黄姜粉混合均匀,腌制半小时入味

干椰丝(Kerisik)做法:
1. 将新鲜白椰丝在平底锅中以中小火干炒,直到椰丝呈现金黄色,散发出香味。 (炒约10-15分钟)
2. 将冷却的干椰丝放入i-Processor智能养生机(干磨杯),按 Auto搅拌,搅拌成细腻的Kerisik
3. 完成后,将Kerisik倒出,备用

香料糊材料和做法:
干辣椒8条(提前用热水泡软)、红辣椒3条、红葱头8粒、蒜头3瓣、黄姜一小块、峇拉煎3gm、姜一小块、南姜(Galangal) 一小块、石古仔2粒、香茅3根、油100毫升、水50 毫升

**将所有的材料放入i-Processor智能养生机内,设定速度5号搅拌至5分钟 (搅拌与煮的功能)
