Ingredients A: Ginger-10 gm, Soy Sauce-20 ml, Pepper Powder-3 gm
Ingredients B: Chicken Breast-100 gm, Chicken Leg(Remove Bones)-100 gm
Ingredients C: Shrimp-15 pcs
Ingredients D: Salt-2 gm, Caster Sugar-2 gm, Chicken Stock Powder-2 gm, Sesame Oil-1 ml, Corn Flour-5 gm, Life Water-Some
Ingredients E: Loofah(Remove Skin)-15 pcs(About 3 loofah cut into 4cm each), Corn Flour-Some
Ingredients F: Oyster Sauce-15 ml, Chicken Stock-20 ml, Caster Sugar-5 gm, Salt-2 gm, Life Water-200 ml, Corn Flour-Some
Methods:
1. Put all ingredients A into the i-Processor, set at speed 3 and blend for 1 minute, add ingredients B into the i-Processor, press “Pulse” 5 times.
2. After blending, set aside for use.
3. Remove the shrimp shell, but left the tail shell remain intact, then rinse thoroughly. Cut through the center part of the shrimp then pull its tail through the cut hole.
4. Put the shrimps into a bowl, add in ingredients D, mix well and set aside.
5. Remove top part of loofah seeds, and then rub the hole with corn flour from ingredient E, then stuff the mixture from Step 2 into the hole.
6. Take the shrimp balls from Step 4, rub with a layer of corn flour one by one, and then place on top of the stuffed loofah.
7. Heat up the steamer, after boiling, steam the stuffed loofah for 8 minutes, and then place them on a plate.
8. Thicken all ingredients F in a pan, and then pour it over the Emerald shrimp balls. Ready to serve.
翡翠金凤尾
材料A:姜-10 gm、酱油-20 ml、胡椒粉-3 gm
材料B:鸡胸肉-100 gm、鸡腿肉(去骨)-100 gm
材料C:小草虾-15只
材料D:盐-2 gm、细糖-2 gm、鸡精粉-2 gm、麻油-1 ml、粟粉-5 gm、生命水-少许
材料E:丝瓜(去皮)-15段(大约3条,切成每段4cm)、粟粉 – 适量
材料F:蚝油-15ml、鸡精上汤-20ml、细糖-5gm、盐-2gm、生命水-200ml、粟粉-适量
做法:
1. 将材料A放入智能养生机, 设定速度3号搅拌1分钟, 再将材料B放入智能养生机内,按“Pulse”键5次。
2. 搅拌后, 取出放在一旁备用。
3. 将材料C去壳剩尾巴, 然后清洗干净。在小草虾的中部切一刀, 然后将虾尾塞进洞口, 从另一端将虾尾拉出。
4. 将虾放入碗中,加入材料D一起搅拌均匀备用。
5. 在每段丝瓜的中间挖出上部分的种子,再将材料E的粟粉涂在丝瓜的中间。将步骤2的材料酿入丝瓜中。
6. 将步骤4的虾球,一粒一粒的沾上材料E的粟粉,然后摆放在丝瓜的肉馅上。
7. 热锅水滚后, 将酿丝瓜放入蒸炉蒸8分钟,然后摆放在碟子上。
8. 将材料F倒入锅中勾芡, 完成后就倒入翡翠虾球中即可享用。
