
Ingredients:
Shrimp 500gm
Seasoning:
Pepper, salt, ginger slices, scallion sections
Batter:
Potato starch 60gm, Corn starch 30gm, All-purpose flour 20gm, Baking powder 3gm, Egg whites 3, Oil 100gm, Water 20gm
Methods:
1. Prepare Shrimp: Peel and devein shrimp, then marinate with seasoning for 15 minutes.
2. Make Batter: Mix batter ingredients thoroughly until the consistency resembles yogurt.
3. Heat Oil: Add oil to a pot, set to medium heat, and heat until it reaches about 70% of its maximum temperature.
4. Coat Shrimp: Dip shrimp evenly in the batter and place into the hot oil.
5. Fry Shrimp: As bubbles form, continuously ladle hot oil over the shrimp.
6. Golden Perfection: Fry until golden and crispy, then remove and drain excess oil. Serve and enjoy!

虾 500gm左右
调味:
胡椒粉、盐巴、姜片、葱段
面糊:
马铃薯淀粉 60gm、玉米淀粉 30gm、普通面粉 20gm、泡打粉 3gm、蛋白 3颗、油 100gm、水 20gm
做法:
1.虾去壳去虾线,然后姜、葱、盐巴和胡椒腌制15分钟。
2.面糊提前调好,拌匀至流动时像酸奶状。
3.锅中倒入油,设中火将油烧至7成热左右。
4.虾均匀裹上面糊,下锅炸。
5.虾气泡浮起来后,不断将油浇上去。
6.炸至金黄色后捞出控油即可享用。
