Cheung Fun 港式肠粉

Ingredients A: Rice Flour – 120 gm, Wheat Starch – 30 gm, Corn Flour – 30 gm, Salt -1 gm, Cooking Oil – 10 ml, Life Water – 450ml

Ingredients B: Shiitake Mushroom (cubed) – 3 pcs, Green Onion – Some, Salt – Some, Pepper powder – Some, Cooking oil – Some

Ingredients C: Shrimp (cubed) – 5 pcs, Spring Onion – Some

Spare ingredient: Cooking oil – Some

Spare utensils: : Square Mould Plate-1 pc, Cake scraper -1 pc

Methods:

1. Put all the ingredient A into the i-Processor, set at speed 3 and blend for 1 minute. Pour the mixture into a bowl and set aside.

2. Preheat the wok, put all the ingredients B into the wok, and cook until fully cooked.

3. Apply a layer of oil on the mould plate, and then pour in sufficient amount of mixture with proper thickness.

3. According to personal preference, sprinkle the ingredients B or C on the mixture, cover the pot and steam with high heat for 2 minutes.

4. After 2 minutes, start rolling by using the cake scraper. Ready to serve.

Tips: You may serve with any sauce as you prefer.

港式肠粉

材料A:粘米粉 – 120 gm, 澄粉 – 30 gm, 玉米粉 – 30 gm, 盐 – 1 gm, 食油 – 10 ml, 生命水 – 450ml

材料B:香菇 (切丁) – 3 顆, 青葱 – 适量, 盐 – 适量, 胡椒粉 – 适量, 食油 – 适量

材料C:虾 (切丁) – 5 只, 青葱 – 适量

备用材料:适量

备用工具:四方模盘 – 1 个, 蛋糕划刀 – 1个

做法:

1. 将全部的材料A放入智能养生机, 设定速度3号搅拌至1分钟即可。 将粉浆倒入碗中备用。

2. 预热炒锅, 将全部的材料B放入锅中, 炒至熟透备用。

3. 在模盘上搽上薄薄一层油,然后倒入适量粉浆,要平均,薄厚要适中。

4. 根据个人喜好,将备用的材料B或材料C撒在粉浆上, 盖上锅盖, 隔水用大火蒸2分钟。

5. 2分钟后,用蛋糕胶划刀在一边开始卷。卷完后即可享用。

小贴士: 根据个人喜好, 可以配搭任何酱料, 味道更佳。
