Snowy Mooncake

Ingredients A: Lotus Seed(Cooked)-300 gm, Life Water-some

Ingredients B: Sugar-35 gm, Honey-25 ml

Ingredients C: Snowy Mooncake Flour-250 gm, Shortening(Melted)-30 gm, Hot Water-50 ml, Life Water-75 ml

Spare Ingredients : Snowy Mooncake Flour-Some

Cooking Utensils : Mooncake Mould(Size: 50g)-1 set

Methods

1. Bring the Life Water from ingredient A to boil in a pot, add the lotus seeds and cook for 3 minutes, take out the lotus seeds and set aside for use. 

2. Put the lotus seeds and ingredients B into the e-Processor, set at speed 1 and blend till smooth. Set aside for use.

3. Put the snowy mooncake flour of ingredients C into the e-Maker, press “Knead” button to start the kneading process. Slowly pour in the hot water and Life Water of ingredients C during the kneading process.

4. Then slowly pour the melted shortening of ingredients C into the e-Maker. After kneading, press “Extrude” button to extrude the dough.

5. Divide the lotus seed filling into 20 gm each and the dough into 20 gm each too.

6. Dust both hands with the spare snowy mooncake flour, put the lotus seed filling on the mooncake dough and wrap it into round shape. Dust the dough with some spare snowy mooncake flour.

7. Place the dough into the mooncake mould, press lightly but firmly for 4-5 times, then squeeze it out. Ready to serve.

* Step 2: Please use Dry Grinder Jug

* Step 3 & 4: Please use the 1.1mm dumpling mould

雪白冰皮月饼

材料A: 莲子-300 gm、生命水-适量

材料B: 糖-35 gm、蜜糖-25 ml

材料C: 冰皮月饼粉-250 gm、白油(融化)-30 gm、热水-50 ml、生命水-75 ml

备用材料: 冰皮月饼粉-适量

备用炊具: 月饼模具(尺寸: 50g)-1 套

做法:

1. 将材料A的生命水放入锅中煮滚,加入莲子煮3分钟,捞起备用。

2. 将煮好的莲子和材料B放入养生调理机, 设定1号打至细滑备用。

3. 将材料C的冰皮月饼粉倒入养生制造机,按“Knead”键开始搅拌。 搅拌时,慢慢地将材料C的热水和生命水倒入养生制造机。

4. 再将材料C的白油慢慢地倒入养生制造机搅拌均匀。搅拌完成后, 按“Extrude”键让面团挤压出来。

5. 将莲子馅料分成每粒20 gm, 面团也分成每片20 gm。

6. 双手沾上备用的冰皮月饼粉,将莲子放在面团上后收口,搓成圆形。然后沾上一层薄薄的备用冰皮月饼粉。

7. 将包好馅料的面团放入月饼模具,轻按4-5次,挤出冰皮月饼,即可享用。
